It is on the west cost of the island of Tahaa, just opposite the delightfully enchanting Bora-Bora, far removed from human habitation, that we selected this plantation, admired for the quality of its natural humus and its red earth, constantly enriched by the leaves of a tree called Falcata.
The beans must be exposed to gentle morning sun for three to four hours per day, for about one month. During the rest of the day, the vanilla beans are stored in cloth and put into crates to promote transpiration. Little by little, the vanilla bean will lose weight and shrink. Throughout this phase, the vanilla must be worked by smoothing and flattening it between the thumb and the index finger.

On each blade, the flowers open one after the other. It is fairly rare to find two or three flowers open on the same blade. After the flower is fertilized, its base lengthens and moves downwards: this is the formation of the vanilla bean.

The vanilla plant is a member of the orchid family and grows in the form of a vine. In the wild state, it lives in tropical rainforests, where it attaches to supports (tree trunks) through aerial roots put out by the stalk. This orchid grows well in the humus-rich soils of deep, humid valleys.
Finally the beans are harvested by hand, bean after bean, day after day, carefully and methodically. Only fruit which has reached full maturity (dark brown color) is selected, a selection process identical to that used with grapes for late harvest and the “Sélections grains nobles” of Alsace.
We selected this plantation, located in the superb and untamed island of Tahaa, the sister of Raiatea, for the quality of its mature beans. The plantation is of the traditional type. The vines are planted on hillsides, on shrubs serving as stakes.

Infuse tea and vanilla in hot water for 4 miutes. For a stronger vanilla taste, you may also add one teaspoon of vanilla extract for two cups. Filter and enjoy !
